While chili is typically associated with fall and winter, why not in Spring too? I’ve adapted it to be low carb and easy to throw together quick!


1 lb ground beef
2 (14.5 oz) cans diced tomatoes with chili seasoning
1 (8oz) can tomato sauce
3/4 cup onion (diced)
1 T chili powder
1t ground cumin

a pinch of the following:
ground black pepper
garlic powder
onion powder

If you like, and don’t need low carb, add:

2 diced sweet potatoes
1 (12oz) can of black beans
I cup or 12 oz can of corn


Heat a large skillet over medium-high heat and brown the ground beef. (10 to 15 minutes).  Add everything else and simmer for 45 minutes, until everything is soft and flavors are blended. If adding the starchy ingredients, cook until sweet potato is soft.

Serve hot with lots of melted cheese, full-fat sour cream and chopped avocado.
